Mango Cardamom Protein Bites

Bringing back an old fav. No bake, no junk, chewy protein bites! Perfect as a pre/ post workout or afternoon sweet snack

INGREDIENTS (makes 9-12 bites)

2 cups raw almonds

¼ cup dried ‘no sugar added’ mango

½ cup unsweetened flaked coconut

½ cup rolled oats 

2 scoops/45g vanilla protein powder (such as Bob’s Red Mill Vanilla Protein Powder)

⅓ cup maple syrup 

1 tsp cardamon (or cinnamon if you prefer)

1 pinch salt 

½ cup hot water 

INSTRUCTIONS

  • Blend the raw almonds, oats and coconut in a food processor or high powered blender until a fine meal texture is formed, add to a medium bowl, set aside

  • Blend the dried mango  (you may need to dice the mango up first depending on the powder of your blender) 

  • Combine the almond meal and mango and add protein powder, salt and cardamom powder

  • In another bowl, stir together the maple syrup, and hot water. Add dry ingredients to the bowl and combine well with your hands*

  • Press mix down firmly into a  lined baking dish.  Cool in fridge for 1 hour then cut into squares. Store in fridge

*If the mix is too wet, add a touch more protein powder, too dry add more hot water and/or maple syrup
