Peanut & Coffee Power Balls

 

Looking for a healthy snack to satisfy your sugar cravings? I think I might have the answer. These on-the-go snack balls contain just 6 ingredients and take less than 15 mins to prepare. Packed with protein, fiber and iron - you’ll get the sweet energy boost without the sugar crash

Prep time: 15 mins

Ingredients (makes approx 20 balls)

1 cup (100mg) old fashioned rolled oats
2/3 cup natural peanut butter (I like Teddy’s PB - you can also substitute in a tbsp of PB2 to lower kcals)
10-12 fresh soaked medjool dates
1 tsp ground coffee expresso beans  * 
1/4 cup maple syrup

Instructions

1.      Slice dates and remove the stones. Cut each date in half and add them to 1 cup of water (ideally room temperature), soak for 10 mins

2.      Combine oats, peanut butter, maple syrup into a large mixing bowl

3.      Once dates have soaked for 10 mins, remove and finely dice. Add to bowl with other ingredients

4.      Using your hands, mix thoroughly. Add expresso powder. Shape into 12 equally sized balls, place them on a plate and leave in the fridge for 1 hr.

Serve!
