Avocado, Lime + Ginger Ice Cream

You seriously have to try this. Creamy + delicious this avo ice cream is quick to make and is the perfect healthy alternative to regular ice cream

My mother-in-law recently gave me the perfect gift - a recipe book full of avocado-based recipes. I’ve always loved avocados both in terms of taste and the fact they are little nutrition power-houses! I get asked a lot whether avocado can be included as part of a healthy diet - the answer is absolutely yes! It’s true that they have a higher calorific value compared to other fruits, however, they are also lower in natural sugars, carbs and have a ton of healthy monounsaturated fats to satisfy hunger and support heart health.

So.. moving on. Below you’ll find one of the recipes from the book, '“Avocaderia” - highly recommend for any avo fan.

They have a great selection of sweet and savory dishes and unusual flavor combinations that taste amazing. Before trying this recipe I had never had avocado ice cream before - I love that it’s not as sweet as regular ice cream and I also don’t need as much because of all those healthy fats, winner!

Ingredients:

  • 1 avocado, pitted and peeled

  • 3/4 cup sweetened condensed milk

  • 1 tsp grated lime zest

  • 2 tbsp fresh lime juice

  • 1/2 tsp grated fresh ginger

  • 1/2 tsp pure vanilla extract

  • 1/2 cup cold coconut milk cream*

  • 2/3 cup cold heavy cream

  • Chopped pistachios or toasted coconut for sprinkling

*The day before you want to use the “cream”, refrigerate 1 can of full fat coconut milk, let chill overnight. The next day, open the can, the thick coconut “cream” will have separated from the watery coconut liquid - spoon off the cream as needed.

Instructions:

1.Combine avocado, condensed milk, lime zest, lime juice, ginger, vanilla extract in blender and run on high speed until smooth

2. In a large bowl, whisk together coconut milk “cream” and heavy cream until whipped and fluffy. Fold in avocado mixture. Transfer to freezer-safe container, freeze for at least 4 hour or overnight. Can stay in freezer for up to 1 month

3. Serve with chopped pistachios or toasted coconut flakes
